Easy Coconut Sugar Cookie Balls

It makes no difference to me if it is Halloween or not. Spooky is a state of being. With or without festive decorations, these raw sugar cookie balls are really easy to make. 

I will say that I am not much for measurements. I just like to throw things together for myself. Cooking is MAD SCIENCE. It's all about experimenting to find out what works, and what suits your personal taste.

You will need:
  • Coconut flour
  • Almond or cashew meal. Nut allergies can substitute for ground old fashioned oats.
  • Sweetener. If going 100% raw, use raw honey. Otherwise, any sugar will do.
  • Vanilla extract. I actually used a rum extract here.
  •  Coconut oil (not liquified). Can also use unsalted softened butter
  • Chocolate for melting. I used Enjoy Life brand. It is allergy safe. No soy! Whoo!

Mix your flours. I used equal amounts of each. I estimate that it was about 3/4 cup.

In a separate, larger bowl, cream your coconut oil or butter, sugar and vanilla extract. I estimate that I used about 1/4 cup sugar or less. I dont like things that sweet. I also used about 2 tablespoons coconut oil.

Work your dry ingredients into your wet ingredients little by little until everything is combined. If its too dry and crumbly, sprinkle with a bit of water until you can compress the dough into balls. 

Roll up your balls on some parchment paper and put them in the fridge for now. While those are chillin', use a double boiler to melt your chocolate.

It is simple, put some water in a sauce pot, and place a larger, metal bowl on top. Glass is fine. Put your chocolate in the bowl with a tiny bit of coconut oil. This will make the chocolate not break your teeth when you bite into it. It will make softer coating. Stir well. 

Turn off the heat, and take out your sugar cookie balls. Dip em in the chocolate and swirl around a bit to coat. You can use a spoon to pour some chocolate on while its on the parchment if you are having issues. You can also press the cookies into patties instead of balls which makes dipping easier too. 

Put your chocolate coated truffles back into the fridge to set for a few minutes, and you are done! Mine came out pretty good.

My cat Wednesday, was also very pleased with how they came out. She was very quick to jump on the table and give them a quick smell and lick before I had to take them away from her.

 You can modify this however you want. Check out some variation ideas:
  • Replace coconut oil or butter with peanut butter, and the half the coconut flour with oatmeal for a peanut butter cup type of deal. 
  • Add cocoa powder to the flour mix for chocolate. A drop of mint extract over vanilla is nice too if that is your thing.
  • Put a maraschino cherry in the middle! Or a chocolate chip.
